Since 2019, Coimbra has been home to a singular representative of Mozambique’s culinary richness. Sara Agnes Muaga, a native of Mozambique, arrived in the city with the initial aim of attending the degree course in Gastronomy at the Coimbra School of Education. But the young entrepreneur found in her talent and passion for cooking a way to bring with her much more than academic baggage – she brought the soul of Mozambican cuisine. And it was with that desire and dedication that she managed to create a little piece of Mozambique on Portuguese soil.
Driven by a deep love of her homeland, Sara found in gastronomy a way to combat homesickness and to keep alive her connection with Mozambique. Inspired by the wish to share the cultural heritage of her country, in 2020 she launched the project A Pérola dos Sabores, previously known as S.A. Sabores. This initiative was born not only of a desire to cook, but of a wish to introduce the Portuguese people to the flavours and traditions she holds so dear and which are an integral part of her identity. Her commitment to representing Mozambique through gastronomy meant that her venture was a great success with the local public, quickly winning the hearts and palates of Coimbra.
Sara stresses that the experience has been deeply rewarding. "It is very gratifying to be able to represent my homeland in such a special way and to witness the positive impact our dishes have had here in Coimbra", she shares. The project not only publicises the flavours of the Indian Ocean, but also promotes cultural dialogue and recognition of gastronomic diversity. Each dish served by Sara is a symbol of love for her homeland, of homesickness turned into something positive and of the pride she feels in being Mozambican. That passion can be seen in every detail, from the choice of ingredients to the loving way she presents the dishes to her customers.
A Pérola dos Sabores has established itself as a meeting point between Portugal and Mozambique, where each dish served tells a story and strengthens the ties between these two nations. Sara Agnes Muaga is thus a true ambassador of her homeland, consolidating the presence of Mozambican cuisine in Portugal. The success of her project is the fruit of her courage in betting on her roots, of her creativity and of her desire to carry a piece of Mozambique with her, showing everyone that gastronomy is also a way of celebrating who we are and of building bridges between cultures.
Sara’s story inspires through its courage and creativity, representing the Mozambican spirit of achievement and helping to close distances through the authentic flavours of her country. Her work is a clear example of the positive impact that a genuine passion can have on the lives of people and communities. With the success of A Pérola dos Sabores, Sara has not only found a way to build her future, but also to take Mozambique’s culture to new horizons, inviting everyone to discover a little more about her country through the senses.
Sara believes that gastronomy is a way of creating memories and telling stories, and this conviction shines through in every dish she serves. For her, the kitchen is a place where people meet, where different cultures come together and where new experiences are created. With her passion and dedication, Sara Agnes Muaga continues to write her story in Portugal, strengthening Mozambique’s presence on the gastronomic map and proving that through cooking we can build bridges and celebrate diversity.
